Chicken Wild Rice Soup from French Meadow Bakery & Cafe

Last Tuesday evening, I found myself with 3 hours to kill at the Minneapolis/St. Paul airport. I had been asked to be a bridesmaid in a close friend’s wedding in California, so I decided to fly out a couple of days early to see my sister and nephew. I left Grand Rapids in the evening, so an airport dinner was on the menu. I figured I would take a long walk, check out the observation deck, and grab some food. The first two things on my list were easy; the dinner part was a little more complicated.

This isn’t the first time that I have traveled since going gluten-free; I’ve been to Europe, but had packed plenty of snacks for that trip. In Minneapolis, each restaurant or fast food place had nothing that I could eat, or at least nothing that qualified as a meal.

But, as luck would have it, I ran into a familiar face on the way to my terminal: French Meadow Bakery & Cafe. They made the most amazing gluten-free sandwich bread (French Meadow Bakery Gluten-Free Sandwich Bread) so I knew it was worth the try to stop and check out their menu. It turns out they also have a few other airport locations and a couple of restaurants in Massachusetts. I went through the express cafe line where I found a selection of g-free soups, including their Chicken Wild Rice. It was so good! I ate my cup of soup, as well as a bag of black bean tortilla chips, as I watched the planes come and go.
